Chilled Minted Cucumber Honeydew Soup - South Beach Diet (Phase 2) 

Ingredients:

  • 1 English cucumber
  • 2 cups honeydew pieces (from about 1/4 medium melon)
  • 8 oz plain non-fat yogurt
  • 1/4 cup mint leaves
  • 2 T fresh lime juice
  • Garnish: 4 fresh mint leaves

Directions:

  • Cut cucumber into 1-inch pieces. In a bowl, combine cucumber, honeydew, yogurt, mint leaves and juice.
  • In a food processor or blender, puree mixture in batches for 30 seconds, and transfer to a large bowl.
  • Season soup with salt and pepper. Chill soup, covered, at least 2 hours and up to 6 hours.
  • Garnish each bowl with mint.

Serves 4.
