Chilled Minted Cucumber
Honeydew Soup - South Beach Diet (Phase 2)

Ingredients:

1 English cucumber
- 2 cups honeydew pieces (from about 1/4 medium melon)
- 8 oz plain non-fat yogurt
- 1/4 cup mint leaves
- 2 T fresh lime juice
- Garnish: 4 fresh mint leaves
Directions:
- Cut cucumber into 1-inch pieces. In a bowl, combine cucumber, honeydew, yogurt, mint leaves and juice.
- In a food processor or blender, puree mixture in batches for 30 seconds, and transfer to a large bowl.
- Season soup with salt and pepper. Chill soup, covered, at least 2 hours and up
to 6 hours.
- Garnish each bowl with mint.
Serves 4.
