Mexican Jumping Beans
- South Beach Diet Recipe (Phase 1)
Ingredients:
- 1 small green pepper or mild New Mexico chili, diced
- 1 small onion, diced
- 1 teaspoon minced garlic, or 2-3 fresh cloves
- 1 teaspoon olive oil
- 1-2 cans of red kidney beans, drained
- 1 cup water
- 2 T chili powder or taco seasoning (may adjust to taste)
- low fat Mexican blend cheese for topping
Directions:
- Sautee the onion, pepper and garlic in a small sauce pan.
- Add the kidney beans, water and seasoning and simmer on low-medium until it has cooked down and the sauce is thick (about 10 minutes).
- Serve topped with a sprinkle of Mexican blend shredded cheese.
