Oven-Roasted Shrimp with Salsa
- South Beach Diet Recipe (Phase 2)

Ingredients:
- 1/2 pound roma tomatoes, diced
- 1 onion, peeled and diced
- 2 limes, juiced
- 1 jalapeno chili, seeded and minced
- 1/2 teaspoon ground cumin
- 1-1/2 pounds of large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
- Preheat oven to 450 F.
- In a 13x9x2-inch baking dish, combine tomatoes, onion, lime juice, jalapeno and cumin; mix well.
- Toss shrimp with oil, salt, and pepper. Evenly spread out shrimp atop tomato mixture.
- Place in oven and cook until shrimp are pink and salsa is hot, about 8 minutes.
- Turn halfway through to ensure even cooking. Serve warm.
