Pork Tenderloin with Ginger Pear Chutney - South Beach Diet Recipe (Phase 2) 

Ingredients:

  • 1 pound lean pork tenderloin
  • 2 small pears
  • 1 tbsp olive oil
  • 2 tbsp sugar free mango chutney (Steel's is what I use)
  • 1 tsp ginger root
  • 1 clove garlic cloves
  • 1/2 tsp dried thyme
  • 1/2 c chicken broth

Directions:

  • Slice pork into 1" slices, brown in olive oil with garlic and salt and pepper.
  • Add pears, chicken broth, mango chutney.
  • Simmer until sauce thickens and pears softened...and until pork is desired doneness.
