Quiche Lorraine - South Beach Diet Recipe (Phase 2) 

Ingredients:

  • 8 eggs
  • 1/4 cup diced red pimentos or roasted peppers
  • 1 teaspoon dry or fresh parsley flakes
  • 1 cup half-and-half
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon white pepper (optional)
  • 1 teaspoon baking powder
  • 12 oz. shredded Swiss cheese
  • 12 oz. cooked crisp turkey bacon crumbled
  • Greased 8 inch square baking pan or deep dish pie pan

Directions:

  • Preheat oven on Bake to 350 degrees.
  • Mix eggs, half-and-half, pimentos and spices in a large bowl with a wire whip. Fold in cheese and turkey bacon.
  • Pour into greased pan and bake for 40 minutes until golden brown. (Since ovens vary, 40 minutes is an approximate cooking time and you should test for doneness by sticking a wooden toothpick in the center. If it comes out clean, and the Quiche is golden brown, it's done.)
