Shredded Chicken Salad - South Beach Diet Recipe (Phase 1)

This recipe intended for Phase 1 or Phase 2.

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 head iceberg lettuce
  • 2 red bell peppers
  • 3 scallions
  • 1 cucumber
  • peanut vinaigrette
  • 2 tbsp chopped peanuts
  • salt

Directions:

  • In a skillet, bring one cup of salted water to a simmer.
  • Add in the chicken breasts, cover and cook over low heat five minutes.
  • Turn off heat; let steam five minutes. Shred chicken with a fork.
  • Cut the iceberg lettuce and bell peppers into strips, slice the scallions and quartered the cucumber lengthwise; slice thinly.
  • Combine vegetables and chicken; season with salt. Toss with peanut vinaigrette and chopped peanuts.
