Spinach Ricotta Crepe Recipe - South Beach Diet Recipe (Phase 1)



  • 1/4 cup frozen spinach
  • 1/4 tsp minced garlic
  • 1-2 tbsp olive oil
  • salt & pepper
  • 3 tbsp of fat-free ricotta cheese


  • Sauté spinach and minced garlic in olive oil, add salt & pepper to taste. (additional fillings such as mushrooms or onions are optional)
  • When cooked add fat-free ricotta cheese, mix well & set aside.
  • One serving of egg substitute (following directions for crepes).
  • When cooked, fill with spinach & cheese mixture, and roll up.
