Tortilla Soup
- South Beach Diet Recipe (Phase 2)
This soup should be phase 2 or 3
because of the corn, which really makes for a great
flavor. This one is actually best a day or two
later…
Preparation Time:1 1/2 hrs max
Ingredients:
- 2 cloves garlic
- 1 med onion chopped
- 1tbs olive oil
- 1 large can chicken broth
- 4 breasts of chicken cooked and cut in bit size pieces
- 1 bunch cilantro
- 2 small or 1 large can of corn drained
- 2 cans recipe cut
tomatoes

1/8th cup chili powder or 1 pkt taco season mix
- 2 cups reduced fat jack or cheddar cheese
Directions:
- Sauté garlic and onions in lag stock or soup pot until soft.
- Add broth, tomatoes, corn, chili powder, and chicken. Simmer for at least an hour.
- Add cilantro and continue to simmer 15 mins.
- Serve garnished with
cilantro and cheese. (Avocado and or low fat
sour cream if you are feeling very decadent!!!)
